Three Owls is a savory haven for modern American cuisine, with a subtle nod to the classic Midwestern steakhouse. This is a reference to the history of The Elms and the natural springs that were once accessible on the property and around town in the early 1900's. In 1893 The Elms started bottling the Regent and Soterian Ginger Ale. In 1904 the Soterian Ginger Ale won first prize at the 1904 Worlds Fair. The water was produced with a secret formula, known only to three men, that is how the three wise owls came to be. Under the familiar logo, the lady attendants would be in the pavilions and would serve visitors from 7 am to 10 pm.

Cherry Springs Cider 6% ABV

Inspired by the cherry orchards that once surrounded our mineral springs, this refreshing cider evokes the gatherings of Excelsior’s past. Tart, bubbly, and semi-sweet, it blends crisp apples with tart Michigan cherries for a nostalgic twist that’s as crowd-pleasing as it is memorable.

Elms Hazy IPA 6.2% ABV

A tribute to The Elms, standing proudly since 1888. This juicy, soft IPA reflects the misty allure of mineral springs. Bursting with tropical citrus and papaya aromatics, it offers a smooth, silky body that transports you to a tropical paradise with every sip.

Dr. McCleary’s Pils 5% ABV

Named for Dr. William McCleary, a pioneer of local wellness culture, this Czech-style pilsner celebrates Excelsior’s legacy as a healing destination. Light, crisp, and crystal clear, it’s brewed with Noble hops and imported malt—perfectly refreshing whether you’re a craft enthusiast or just beginning to explore lagers.
